๐ Affordable Bistro with Two Michelin Stars - What's the Secret?
๐ A friend raved about this place after visiting, saying every dish was delicious, so my expectations were sky-high before going. ๐ The restaurant is small but charmingly decorated, and the menu changes with the seasons. ๐ We ordered a set menu plus an additional main course, trying every meat dish. ๐ This season, the menu focuses on fish dishes. ๐ฅ Appetizer Halibut Spa Smoked and cured halibut, quite salty. Those who aren't used to salty cured fish might find it overwhelming. The fish ๐ is tender and should be eaten with cucumber, seaweed, and crispy rice chips to reduce the saltiness and add a richer texture. ๐ฒ Main Course Southern Fish Soup The fish soup is served in a teapot, very rich and fresh. However, the fish used is cured cod, again, salty โผ๏ธ The surrounding fennel, celery root, and other root vegetables are delicious as they are soaked in the soup and cooked to perfection. I personally think the pairing isn't quite right, as both the previous dish and this one are salty, making it a salty fish turnaround... ๐ฆ Wandering Duck This dish, ordered separately, was really good! Perhaps because it contrasted sharply with the two fish dishes before. The duck breast ๐ฆ is incredibly tender, slightly bloody, and chewy with a burst of juices. Served with juniper sauce and blueberry sauce, it's an extraordinary combination. It has a forest-like taste and is full of wild flavor. ๐ฎ Dessert: Risk and Reward The pistachio financier is tasty, with a strong milk flavor, but can be a bit rich if eaten in large amounts. The accompanying jelly, elderflower, and cranberry sorbet help to cut the richness, but it feels like a standard Nordic dessert... All the bread served was delicious, and the service was exceptionally nice. You ask me why it got two Michelin stars? I'm not quite sure.
