A unique New Mexico restaurant established in 1962, hidden along a dark road and surrounded by trees. Once you drive in, it’s like entering another world—a huge parking lot and a beautifully decorated Mexican-style entrance. The interior is spacious, exotically furnished, and truly gorgeous. 😍 Appetizers: 🥩 Famous red chili ribs – A must-try! Unlike the grilled version on the menu, this one comes with sides. These baby back ribs are cooked until fall-off-the-bone tender with fragrant and mild red chili. Just this appetizer alone can make you feel kinda full! 🥑 Fresh guacamole – Made with avocado, diced tomatoes, and served with nachos. It’s presented in a whole avocado shell. Avocado lovers will enjoy it, but be warned—it’s super filling! New Mexico Grill: 🍖 12oz ribeye & enchilada – Those with a Chinese palate might not love the enchilada (it’s loaded with beans and cheese), but the ribeye is delicious! The owner is super nice and treated us to a special bread similar to ma tuan (sesame balls) 🍞, along with a homemade calabacitas side—a mix of squash, oil, butter, and corn.
