In the center is a large, tender, and savory squid that is crispy on the outside and soft on the inside. It's probably the softest squid I've ever had in a Spanish seafood paella. There are many juicy mussels, lots of tender squid rings, three or four pieces of slightly bland but soft roasted monkfish, two or three pan-seared scallops that are fresh and plump, two or three bouncy shrimp, and several small pieces of crispy, salty, and soft smoked ham. 🎢 The rice near the bottom of the pan has a delicious crispy crust. The saffron lobster broth in the middle makes the rice soft and flavorful, and it's cooked with soft green and red peppers and onions. 🌟 #NewYork
