Even some Denver locals haven’t tried this place! Buckhorn Exchange—the city’s oldest wild-game restaurant—was a must-visit for this adventurous eater. Famous for its zoo-worth of taxidermy and century-old buffalo "oysters" (yep, those oysters 🥚🥚), I had to take the challenge. 🫡 🔹🔹🔹🔹🔹🔹🔹🔹🔹🔹🔹🔹🔹🔹🔹 Must-Try Dishes 1️⃣ Buffalo Oysters ⭐️⭐️⭐️⭐️⭐️ The legendary bison testicles! As a true "when in Rome" Chinese, I had to order them. Deep-fried, they look/taste harmless (like chewy nuggets)—but eat them hot, or they get funky. 😅 Our server hooked us up with extras since we were the last table! 2️⃣ Elk and Two Quail ⭐️⭐️⭐️⭐️⭐️✨ Elk (great for "qi deficiency" gals) + quail (MY FAVE). Gamey, tender, and 100% Colorado. 🦌🐦 🔹🔹🔹🔹🔹🔹🔹🔹🔹🔹🔹🔹🔹🔹🔹 The taxidermy collection is INSANE—felt like being watched by a forest of dead animals 😂. Upstairs has even more (post-meal safari recommended!).
