Dublin’s Newest Ceiling-Level Restaurant | D’Olier Street🥂

For a special day, I booked this 2024 newcomer to the Michelin scene in the heart of the city. I anticipated a homogenized fine dining experience, but the seating was arranged at the bar in front of the open kitchen – a nice perspective to watch the busy 🧑‍🍳 chefs up close. Tasting Menu consists of 13 courses The chef personally explains each dish as it’s served.🌟 The first appetizer was a delightful surprise. Duck with a hint of spicy Mexican pepper – a soulful bite.🌟 Seafood waffle + trout + kale + roe – a refreshing yet rich combination. Rabbit shashlik skewers – a very Japanese texture.🌟 My favorite foie gras mousse + English scones – incredibly smooth. Lobster tail + lobster soup with orange – a sweet and savory mix. Slow-cooked halibut with tight flesh, accompanied by smoked white clam and tender broad beans, served with caviar toast.🌟 Lamb with apricot fruit – the crispy, charred parts are the best. The dessert section was a joy, not too sweet, which is high praise. My personal favorite was the strawberry sorbet and panna cotta. 🕑 Total dining time was 2.5 hours. 💭 It seemed to incorporate a lot of Asian flavors and cooking techniques, as well as elements of molecular gastronomy.
