Fantastic Granular Beef Tartare

I haven't yet had a truly delicious T-bone steak, but Florence sure knows how to make beef tartare! The beef tartare at the century-old Paoli was so good it completely changed my perspective. Every element was delicious.😍😍😍 The beef itself was of high quality, marinated with just a hint of spices and a lot of natural sweetness. It was not salty at all and very refreshing. The granularity and the level of aging were so full that it felt like eating beef coconut jelly—extremely chewy and bouncy.😻😻😻 The crispy egg on top was a dish that required some skill. . The moment you cut into it, you can't help but be impressed. On top of the traditional tartare with raw egg yolk, they added a crispy shell, which indeed upgraded the texture.❤️❤️❤️ The sun-dried tomatoes were incredibly concentrated—like tomato bombs. The intense flavor of the concentrated tomato sauce combined with the roasted aroma was amazing. The end of the tomato universe should taste like this.💕💕💕 It was paired with mustard mayonnaise and yogurt sauce, with a touch of sweet and sour, of lime zest. For the first time, I felt that mayonnaise could be so refined. Their tiramisu was also delicious. The light and dreamy mascarpone cream was like ice cream but definitely soft and fluffy. It was cool and airy, with a milky aroma. It had everything you could want—no alcohol flavor, and the ladyfingers were so moist they seemed to disappear. They were soaked in a rich chocolate coffee liquid. After eating it, you're sure to have sweet dreams. The pre-meal bread was also pretty good for a restaurant. Although it was still dry and cold, the wheat aroma was so strong, with enough roasted and salty flavors that I couldn't help but eat three pieces while waiting. Beef tartare: €23.80 Tiramisu: €8.80 Table fee: €4.90 The prices are hard to break down, but the flavors are definitely worth it.
