Tempura Ichika New York's Tempura Matsui has landed on Oahu! The new tempura spot, Ichika, features light and airy batter that doesn't leave you feeling greasy, perfectly locking in the seafood flavors. All the ingredients are sourced directly from Japan, and they are incredibly fresh and sweet— even better than the original New York location! 🦐 The basic tempura dipping options include salt, kelp salt, curry powder, grated radish sauce, and lemon. The chef also pairs each ingredient with a special seasoning, such as crab roe, pickled onions, ginger, and spice salt. The attention to detail is impressive, and you can really feel the meticulous care in the cooking. 🥢 For the tempura sea urchin, you can choose between kelp or nori. I tried both and highly recommend the kelp! It's so delicious—the subtle saltiness of the kelp enhances the rich sweetness of the sea urchin, which is also the chef's top recommendation. 🍣 The tempura squid is amazing. The outer layer is crispy and fragrant, while the inside is soft, tender, and elastic. The snow crab legs are the best I've had in the US so far. The meat is plump and sweet, and when paired with the rich crab roe sauce, the flavor just explodes! The sea bass is also well-fried, with a crispy exterior and a juicy, flavorful interior. 🦀 When the chef heard we came all the way from New York, he treated us to a special dish of tempura puffer fish as a thank you for our visit and to make up for a small incident where I found a bone in the eel in my chawanmushi. The service was really great! 😊 Dinner is $160 per person, and there was an additional option of $10 per piece for tempura scallops that night.
