🔪 Jiang Hu Ye Zhu Gan (Stir-Fried Pork Liver) Their signature dish! Preparing pork liver is tricky – a few seconds can make it tough. The owner only makes it when fresh liver is available that day (never frozen!). Stir-fried with Pixian chili bean paste, it’s spicy, numbing, fragrant, and incredibly tender. The side ingredients like ginger, wood ear mushrooms, and onions soak up the sauce perfectly. 🌶️🍖 🐟 Grilled Fish One of the few places in Austin serving delicious grilled fish! They use fresh striped bass – firm and flavorful. Lightly fried for crispy skin, then simmered in a secret spicy broth (probably with cumin, chili sauce, hotpot base, etc.). The complex flavors are so good – even shoe leather would taste amazing in it! 😂 You can take the leftover broth home to cook noodles or veggies. 🍜🔥 🌽 Golden Corn with Salted Egg Yolk Tastes just like high-end Chinese hotels – no exaggeration! Sweet, burst-in-your-mouth corn coated in sandy salted egg yolk. The pine nuts add a nutty aroma and crunch. Eat it fresh for the best texture! 🌽✨ 🍖 Guo Bao Rou (Sweet and Sour Pork) As a non-Northeasterner, I can’t vouch for authenticity, but my friends and I loved it! Crispy outside, tender inside, with a tangy-sweet sauce (more sour than sweet). 🤤 🍗 Gui Fei Ji (Imperial Concubine Chicken) The golden skin isn’t artificial coloring – it’s from free-range yellow-feathered chickens! The chicken itself is flavorful, and the ginger-scallion dipping sauce is identical to what I had in Guangzhou. Salty and umami – a perfect match for poached chicken! 🐔💛 🐷 Tian Peng Yuan Shuai (Whole Roasted Pig Head) I’ve written about this before – it’s epic! You won’t find another Chinese restaurant in Texas offering a whole pig head experience. Requires at least one week advance notice due to complex preparation. 🐷🎉 🌶️ Suan Jiao Dou Chao Ji Zhen (Pickled Long Bean with Chicken Gizzards) The long beans are organic, grown in the owner’s backyard and pickled in-house!
