I'm won over by the pan-fried duck liver at Zunfthaus zur Waag!

⭐Thank you to my colleague for bringing us to this restaurant, which has become one of the most beautiful culinary memories of my entire trip. Zunfthaus zur Waag is truly one of the top restaurants in Zurich, and its Google rating is as high as 4.6. ⭐I never expected to be so captivated by the pan-fried duck liver at Zunfthaus zur Waag. Initially, I was dismissive of the dish when I saw it on the menu. I've always disliked the mushy, fishy taste of liver, whether it's pig or chicken liver—I always say no. But I didn't realize that when the duck liver is pan-fried to a golden brown and served with seasonal side dishes, it could completely change my opinion on liver dishes. ⭐Compared to foie gras, duck liver has slightly less fat. However, the taste difference between duck and goose liver is not significant. Traditionally, foie gras is more delicate and rich, and it's a bit more expensive; whereas duck liver has a more robust flavor, is easier to cook, and many people who are used to duck liver find foie gras a bit bland. When the liver is sliced thick and quickly pan-fried at a very high temperature, the exterior becomes crispy and fragrant, while the inside is warm and smooth, melting in your mouth, allowing you to taste the unique flavor of the fatty liver. ⭐The crispy-on-the-outside, tender-on-the-inside duck liver slices open with just a touch of a knife. Cutting off a small piece and placing it in your mouth, the smooth, rich duck fat floods your taste buds. The taste is more concentrated than that of fatty pork, and I couldn't help but cover my mouth to stifle the moan of delight—it was a culinary climax, so embarrassing. ⭐As for the other appetizers, they were quite ordinary. The signature dish is the traditional Swiss potato pancake, which I didn't order.
