Il Palagio

I booked a table a month in advance to dine at the Michelin one-star🌟 restaurant "Il Palagio (The Palace)" inside the Four Seasons Hotel in Florence. To start, I ordered a glass of 10-year-old Salon Blanc de Blanc vintage champagne as an aperitif. I then chose the €190 eight-course tasting menu (with options for land, sea, and vegetarian) and the €175 Gemme eight-glass wine pairing (featuring wines from Italy, France, and Spain). 1️⃣ **Spring Asparagus, Fermented Garlic🧄, Pickled Egg Yolk, and 36-Month-Aged Parmesan Cheese🧀️**: This was the most surprising dish for me. It's asparagus season, and the chef used both white and green asparagus, which paired beautifully with the aged cheese. The pickled egg yolk was presented in a molecular gastronomy style, adding a great visual appeal. 2️⃣ **Grilled Scallops, Carrot🥕, Citrus, and Crispy Amaranth**: The only minor drawback was that the scallops were a bit too salty and had to be eaten with the sweet and sour sauce to balance the flavor. 3️⃣ **Black Grouper, Fennel, Clams, and Iodized Sauce**: A well-balanced and flavorful dish. 4️⃣ **Egg White Pasta, Grapefruit, and Giaveri Osietra Caviar**: A unique and elegant combination. 5️⃣ **Organic Gartagnana Barley, Watercress, Squid🦑, and Squid Ink**: A creative and delicious dish with a touch of the sea. 6️⃣ **Roasted Pigeon🐦, Red Onion🧅, Star Anise, and Elderberry**: The star anise perfectly neutralized the pigeon's slight gaminess, making it a dish that even suits Chinese taste buds. 7️⃣ **Spring Loquat, Blue Cheese, Buckwheat, and Bitter Almond Biscuit Crumbs with Pine Nuts**: Using blue cheese in a dessert is quite bold, but it worked wonderfully with the seasonal loquats. The combination of sweet and savory was a delightful experience. 8️⃣ **Caramelized Puff Pastry, Rhubarb Compote, Ginger, and Yogurt**: Since I'm not a fan of dark chocolate🍫, I requested a substitution, and they kindly changed it to this dessert. After finishing these two desserts, they brought out a checkerboard with various mini-desserts to choose from. The pickled cherries🍒 and raspberry macaron were another delightful surprise.
