Is Paris’ Hottest New Bistro Worth a Visit?
⭕️The chef here is Samuel Lee, the former head chef of Xiang Gong (yes, the Michelin-starred restaurant at Shangri-La!). So, I came with extremely high expectations! We were a group of four and had booked half a roast duck in advance, with the rest of the dishes ordered à la carte. Here are a few dishes I highly recommend! ⭕️Spicy Fried Shrimp Balls Since the restaurant leans towards Cantonese cuisine, the spiciness is around 1-2 on the scale. The shrimp balls are crispy on the outside and tender on the inside. When you bite into them, you get a burst of succulent shrimp. Even the flaky pastry strips on the outside are incredibly fragrant and delicious! ⭕️Teochew-Style Marinated Fresh Oysters They use the top-tier Gillardeau n°3 oysters from France. The traditional Teochew marination method preserves the oysters' natural sweetness and tenderness. The taste is a perfect blend of salty, fresh, slightly spicy, and citrusy. One serving is definitely not enough! ⭕️Thick-Sliced Amberjack Sashimi The thick slices of amberjack are tangy and refreshing. With each bite, the delicate fish fat and the fresh, zesty flavors combine perfectly in your mouth. The dish is inspired by the traditional "Lao Qi" (tossing for good luck) practice from the Chaozhou and Guangdong regions during the Lunar New Year. The chef has thoughtfully brought this element to Paris. ⭕️Pork and Shrimp Siu Mai Give this a try! It’s nothing like the frozen, mass-produced versions you might find elsewhere. Each piece is plump and full of flavor, combining pork, fresh shrimp, and mushrooms. The rich, savory taste will truly change your perception of siu mai! ⭕️Cognac-Glazed Char Siu The pork is marinated with Cognac and then slow-roasted to perfection. The result is a slightly crispy exterior and a juicy interior. The sauce, traditionally sweet, gains an extra layer of complexity with the addition of Cognac, adding a hint of fruity aroma and subtle oak notes.
