Finally scored a reservation at Sushi Inaba! Chef was warm, experience was excellent โ€” 18 courses of pure delight. Aside from the simple setting, almost nothing to complain about. ๐Ÿ“Ž Uni Soba Like Kaneyoshiโ€™s oyster noodles โ€” uni was sweet and fresh, paired with cool soba noodles for a clean, smooth bite. ๐Ÿ“Ž Ankimo (Monkfish Liver) Silky texture, perfectly balanced flavor โ€” not too rich, just right. ๐Ÿ“Ž Blue Shrimp with Seaweed Tangy-sweet seaweed complemented the sweet, tender shrimp โ€” so refreshing! ๐Ÿฃ Sushi Highlights โ€” the rice was well-chosen, seasoning thoughtful. Favorites: ๐Ÿ“Ž Bluefin Tuna Rich, fatty, seasoned just enough to enhance without overpowering. ๐Ÿ“Ž Charred Toro Perfectly seared to bring out all the fatty aroma โ€” incredibly fragrant! ๐Ÿ“Ž Uni Sweet, creamy, classic โ€” exactly what you crave. ๐Ÿ“Ž Kohada (Gizzard Shad) Usually the fishiest for me, but chef handled it masterfully โ€” no, just deep, savory umami. ๐Ÿ“Ž Tamago (Egg Omelette) One of the best Iโ€™ve had โ€” sweet and savory in harmony, fluffy yet firm. Overall โ€” one of my top omakase experiences in LA so far. Hard to book, chef is kind, but pacing is relaxed โ€” we ate from 7 PM to 10 PM (maybe because they only do one seating a night?). Simple ambiance, but truly a one-Michelin-star worthy meal.
