Smoked pork tenderloin with a smooth pumpkin puree and fermented vinegar sauce, rich in flavor yet refreshing. 3️⃣ Birch Fired Scallop Charcoal-grilled scallops with a special roe sauce, a burst of Nordic sea flavor in every bite.
