Thin slices of veal are wrapped in creamy tuna sauce, as gentle as the sunset in Tuscany. Juicy and sweet Liguria tomatoes, tangy sea purslane, and capers add a light touch, like a ballerina's toes touching the groundโsteady yet lively. ๐ Stillman Farm Pork with Smoked Potato Terrine, Italian Peas, and Morels: The plating immediately won my heart! The composition is so beautiful, with an upward-reaching vibe that embodies the vitality of spring. The puree of Italian peas is incredibly sweet, a sweetness that makes you feel the world is a wonderful place. The layered smoked potato terrine is golden and crispy, complementing the delicate morels.
