📍New Mexico|What to Eat at Ojo Caliente Hot Springs Resort 🏜️🍽️
In my last post, I shared about the hot springs resort in New Mexico—now let’s talk about the restaurant! After all, out in the middle of nowhere, you’d have to drive nearly an hour to Taos or Santa Fe for decent food besides this place 🚗💨. 🌽 Complimentary Blue Corn Muffins with Butter Made from blue cornmeal, unique to Mexico and the Southwestern U.S. 🌮💙. Though blue isn’t the most appetizing color, these muffins were soft yet slightly gritty, warm and full of corn aroma 🌽✨. Honestly, the restaurant is missing out by not charging for these—they’re that good! 🌽 Caesar Salad I ordered this purely because my body was craving veggies after days on the road 🥗🚐. Nothing extraordinary, but definitely solid. Just happy to have crisp, fresh lettuce in the desert! 🌽 Braised Buffalo Short Ribs Served with trusty corn once again 🌽🍖. During the drive, we passed free-range buffalo everywhere, so trying local buffalo was a must! The meat was tender, falling off the bone, and brushed with a mild chipotle sauce—just a hint of spice. Highly recommend! 🌽 Tomato Pasta I added grilled chicken breast (salmon is also an option! 🐟). It had a New Mexican twist: topped with chili flakes (not spicy) and local pine nuts 🌰. Besides Parmesan, they used mascarpone cheese—a double creamy cheese attack! 🧀💥 The restaurant may look small, but it fills up quickly at mealtime since most hot spring visitors eat here 🍽️👥. We made dinner reservations on OpenTable when booking our private soak—but walk-ins might work too?
