Sauce. 🌟 Sevruga: Darker in color with buttery, creamy, and mineral flavors. The fish taste is mild but saltier than other varieties. 🌟 I’m not sure of the exact grade, and the staff couldn’t explain it clearly. It feels like Pressed Caviar—irregular in shape, like a deflated balloon. The flavor is rich but also high in salt. 🐟 Sterlet: Darker in color with very fine grains. It has a buttery taste, slightly sweet, and a hint of spiciness. The Sterlet I’ve had before was milder, but this one tasted quite different, probably due to the fish’s diet. 🐟 🌟Siberian Sturgeon: Darker in color with vanilla and mineral notes. 🐟 Pacific Sturgeon: Darker in color with nutty and mineral flavors. 🐟 The restaurant also offers Beluga and Almas Osetra caviar.
