Kaiseki cuisine is truly perfect for a once-in-a-lifetime experience. November at Kappo Sono already has a winter vibe❄️, from the presentation to the dishes. 🌸 Personally, I felt that the November menu wasn't as stunning as the previous ones. 🌟Maybe it's because they focused more on the natural flavors of the ingredients and reduced the subtle seasonings, or perhaps it was just the first day of the new menu and the dishes hadn't quite settled yet. But that shabu-shabu pot is something I'll remember all winter long. 🍲 🍃 【Appetizer】 The matsutake and kudzu soup couldn't help but make me nostalgic for the water towns of Jiangnan. Its stringy texture, similar to lotus root soup, is smooth and refreshing. 🌟 The crisp lotus root pieces and matsutake pieces in the soup create an elegant umami flavor, with a hint of sweetness as you chew. 🍃The fried rice on top and the sticky, soft mochi at the bottom add a delightful grainy sweetness to the whole bowl. The yuzu slices gradually release their tanginess with each spoonful, providing a refreshing finish. 🍋 🌟 #NewYork 🌇🌟
