New York | Otoro! A dry aging omakase specialty shop with 35-day aging

It’s been ages since I wrote about a New York omakase—today, I’m here to recommend something special! This spot specializes in ✨ dry-aged sashimi!! I even got to try 35-day dry-aged otoro—insane! 🌟 Flavor 🌟 The texture of dry-aged fish is totally different! It’s softer, has no fishy aftertaste, and the flavor lingers longer. The chef let us try regular otoro first, then the 35-day dry-aged version—tasting them back-to-back was such a unique sushi experience. The seasonings are creative too! There’s homemade cherry blossom salt, and even a Mexican-inspired sauce—it tasted like a taco in sushi form 🌮~ 🌟 Value 🌟 The fish quality is top-notch, and they have some pretty unique varieties! We tried Mount Fuji 🗻 salmon and kinmedai (super fatty—this was one of my faves!). You can choose between a 12-course ($100) or 15-course ($130) menu. For dry-aged omakase, this price point is so worth trying! 🌟 Special Features 🌟 Beyond the dry-aging, there’s another big highlight—it’s a Kosher omakase! Even the fish-cutting knives in the shop are strictly Kosher-certified. Perfect for recommending to Jewish friends! Because of this, they only serve fish with scales and fins—no shellfish at all. Plus, their table food is worth trying too! The head chef used to work at 11 Madison Park—we ordered two dishes, and they were as as Michelin-level food. The tuna tartare came with crispy potato shred pancakes—so crunchy! The honey dessert was a surprise too—with cake, honeycomb, and pistachio crumbs, the textures were super rich. I’d definitely come back just to try their table food—think of it as a budget-friendly Michelin alternative!
