You definitely donโt want to miss this hidden Basque gem thatโs unfairly underrated. The chef has experience working at the Michelin-starred Alinea in Chicago. This place has been on my list for a while, and I was truly surprised by how amazing the whole dining experience was! The potato chips are thin, crispy, and refreshing without being greasy. ๐ CALLOS DE JOAN ๐ Beef tripe!! For the first time ever, I had tripe in a Spanish style outside of Chinese cuisine. Itโs stewed to tenderness with a light seasoning, similar to having it at a dim sum brunch. Itโs very juicy and pairs perfectly with the crispy, toasted sourdough. ๐ณ Txistorra Sausage ๐ The texture is incredibly bouncy and tender, not as salty as I expected.
