You definitely donโ€™t want to miss this hidden Basque gem thatโ€™s unfairly underrated. The chef has experience working at the Michelin-starred Alinea in Chicago. This place has been on my list for a while, and I was truly surprised by how amazing the whole dining experience was! The wine list is also quite interesting. ๐Ÿท CINCO JOTAS IBERICO CON PATATAS CHIPS ๐ŸŒŸ Perfect for pairing with drinks, the Iberico ham is top-notch with a rich nutty flavor and a satisfying chewy texture. The potato chips are thin, crispy, and refreshing without being greasy. ๐Ÿ” CALLOS DE JOAN ๐ŸŒŸ Beef tripe!! For the first time ever, I had tripe in a Spanish style outside of Chinese cuisine. Itโ€™s stewed to tenderness with a light seasoning, similar to having it at a dim sum brunch. Itโ€™s very juicy and pairs perfectly with the crispy, toasted sourdough. ๐Ÿณ Txistorra Sausage ๐ŸŒŸ The texture is incredibly bouncy and tender, not as salty as I expected. We enjoyed it with sourdough, creating a whole new level of taste sensation. ๐ŸŒญ Secreto Iberico ๐ŸŒŸ๐ŸŒŸ๐ŸŒŸ The highlight of the night!
