The rice is fragrant and served piping hot, with just the right amount of sushi vinegar. It's perfectly seasoned, so delicious that you don't even need to dip it in soy sauce. My favorites were the toro and salmon. Even though they were minced fish, the quality was top-notch. I also added a monkfish liver hand roll, which was surprisingly not fishy at all, but rather fragrant and not greasy. The tonkotsu chashu ramen here is hands down one of the best bowls I've had in recent months.
