๐ท Wine Bar in Paris, also known as a flying kitchen restaurant, has recently been hosting Dublin chef Adam Purcell. The ambiance is great, featuring natural wines without a specific wine list. ๐ฟ๐ฅ ๐จโ๐ณ Chef's Special Menu: A unique set of dishes designed by the chef, combining Irish and French flavors. ๐ Favorites: Utah Beach Oyster No.3: These oysters hail from Utah Beach in Normandy, France. They are plump, elastic, and just the right amount of salty. Paired with gooseberry puree that's been frozen to create a slightly grainy sorbet, it's a tangy and refreshing delight. ๐ฆช๐ Parmesan Yorkshire Pudding: A twist on the traditional British Yorkshire pudding, infused with stracciatella and tomato fruit. The crust isn't as crispy as expected, but it's a fresh start to the meal. ๐ ๐ฎ ๐ Dislikes: Ricotta Stuffed Gnocchi with goat cheese sauce is a bit too rich for my taste. ๐ Treacle Roasted Challances Duck Breast is also quite good. The duck breast is marinated with syrup and then roasted while continuously basting, resulting in a crispy skin with a caramelized flavor. The sauce is a traditional yellow wine sauce from Jura, France, with a nutty aroma, which pairs well with the dish. However, the duck breast is unevenly cooked, which affects the overall experience. ๐ฆ๐ฏ ๐ท Wine Recommendation: In search of a wine with a hint of tannin, I was recommended the Vej Bianco Antico 2022 from Emilia-Romagna, Italy. It has a rich aroma of flowers, fruits, and spices, which matches the dishes quite well. ๐๐ผ ๐ญ Overall: Not particularly astonishing, but worth a try.
