I love modern restaurants that aren’t limited to one cuisine—they often blend multiple styles with creativity and always bring surprises 🍽️✨. PAGO is exactly that kind of place: drawing from various influences to create a unique and distinctive flavor profile. They have two locations and are the sister restaurant of the popular downtown spot FINCA 🧡. Their dinner menu is refined and clever, with seasonings that feel fresh and exciting. However, their brunch is pretty standard—just typical American breakfast without much innovation 🥞☕. ⭐️⭐️⭐️⭐️⭐️ STRAWBERRIES & BEETS As a huge beet fan, I always order beet salad wherever I go. Theirs is the best in Salt Lake City! 🥗 The golden beets are roasted to a honey-like sweetness, paired with marinated strawberries for a tangy kick, slightly acidic goat cheese, and crispy quinoa with a nutty aroma—absolutely the ultimate beet salad experience. ⭐️⭐️⭐️⭐️ BRAISED SHORT RIB The short rib is tender and flavorful with a sweet caramelized onion touch, served alongside carrot mash mixed with mascarpone 🥩🧀. They use Cipollini onions—naturally sweet and juicy, perfect with red meat. ⭐️⭐️ Roasted Chicken Dry and underwhelming—avoid it! 🚫🍗 Based on my experience, the only poultry worth ordering at trendy restaurants like this is duck. Chicken or quail tend to be either dry and bland or just unremarkable. ⭐️⭐️ Breakfast Nothing special—it’s not bad, but very average.
