This experience was a birthday gift for my son, and it was a total success. It was more than just a hands-on cooking class — it was a personal lesson in how to build flavor and cook with passion! We arrived 30 minutes early and watched Chef Sassy setting up the kitchen. When she learned he was a budding chef, she immediately got him involved — starting with making the salted caramel sauce for bread pudding 😊🍮. At the beginning of the class, she shared the fascinating origins of bread pudding — dating back to the Middle Ages 🏰📜. She explained and demonstrated how to build layers of flavor, mix dry and wet ingredients, and bake with intention. We made Gumbo Z’Herbs and Corn Maque Choux, and also learned essential knife skills, safety, and proper chopping techniques 🔪🌿. Chef Sassy was absolutely wonderful — full of engaging stories and a deep desire to pass on her wealth of knowledge and experience. Given my son’s culinary dreams, she took a special interest in him, sharing insights not only about cooking but also about running a restaurant 🧑🍳❤️. He was absolutely thrilled by the attention! She taught us a special technique to make the Maque Choux as flavorful as possible: mixing vegetable broth with cream, adding herbs and spices, fresh garlic, sliced onions, and squeezing the corn cobs (scraping them to release all the bits and “milk”) — which not only boosts flavor but acts as a natural thickener 🌽✨. The Gumbo Z’Herbs was quick and simple to prepare, though it required a roux — another skill she taught us, how to make a quick roux! Through the use of herbs, spices, and clever techniques, we built complex layers of flavor in every dish. All in all, it was an amazing experience — truly worth every penny!
