The Best Pho in the World is in Paris
❤️After several days of Michelin-starred dining in Paris, we were in desperate need of some Asian food. Without hesitation, we headed to Ha Noi 1988, the highest-rated pho spot near the 8th arrondissement. Whether it’s the best pho in the world remains to be seen, but the broth here was so good that we went back two days in a row. ❤️Vietnamese pho varies by region. In the northern capital of Hanoi, pho is typically served with chili flakes, chili sauce, and lime juice, accompanied by a small fried dough stick for dipping into the broth. In the south, pho tends to be sweeter, served with fresh herbs, bean sprouts, and a black sauce made from fermented beans. However, it’s said that pho originated in northern Vietnam, where the beef broth legendarily comes from French colonists using leftover beef bones to make soup, while the noodles were inspired by the rice noodles brought by Chaozhou immigrants. ❤️It’s said that Ha Noi 1988 makes their pho fresh daily, with the broth simmered for 24 hours. The chef even won first place in Vietnam’s Golden Cinnamon Best Pho Chef competition. We ordered two types of pho: the chef’s recommendation and the TNT, along with a side of nem (fried spring rolls). ❤️The pho noodles were excellent—smooth, slightly chewy, and with a hint of stickiness. Both dishes were seasoned with a generous amount of pepper.
