The owner's brewing habits and techniques are very special... I recommend sitting at the bar to watch. 🎢🍃 He doesn't use a temperature-controlled kettle. He mixes water from two old kettles. For pour-over, he often uses a large water flow and pours directly into the center. 🌇🌿 The coffee grounds rise like a soufflé and spill out of the filter paper. Except for the first part, I basically didn't see him circle around. The grind is also coarser. He doesn't use the popular method in Tokyo of using ice balls to catch the coffee liquid from the filter. 🎢🍃 It's simple, but the coffee is very fragrant and delicious. He will taste a small cup before serving, including hot Americano. The prices are well-received in the busy downtown area of Tokyo. 🌇🌿 Even when busy, the owner will still change the vinyl records.
