🌿My J-style trait is all about booking the restaurants I want to eat at for all five days in Copenhagen. Of course, Noma is excluded since it’s not open for a new round of reservations. I’ll definitely be back to Copenhagen anyway. 🌿On the first day, I ate at U formel. The disappointment started with the bread (didn’t expect that). This bread, cut into four, was very large. One bite and it was greasy beyond belief. It was like it had been fried in oil and then sprinkled with a bit of salt. As a qualified carb enthusiast, I’m very forgiving of bread. I can handle Sam’s affordable bagel, but not this? I tried it again with butter, and still, I couldn’t handle it. Sorry. They brought 1 portion, and when they took it away, it was about 0.975 portions left 👋🏻 🌿I ordered the 5-course menu and an additional dish and a glass of wine. If you can drink, I suggest going for the pairing wine. Four glasses for just 500dkk – that’s a steal. If you can’t drink, you can opt for the non-alcoholic pairing, four glasses for 400dkk, or a glass of champagne for 200dkk. 🌿The best and most surprising dish was the first one: sweet shrimp with white currants and tarragon, served with sour cream. The raw sweet shrimp and white currants together had a very refreshing taste. The following dishes were one after another, just ordinary. The venison was also just okay. By the time dessert came, I was already too full and couldn’t eat anymore. 🌿Although the food was average (it’s a matter of personal taste), the service was excellent. They greeted my birthday as soon as I entered. The small flag 🇩🇰 raised on the table is a Danish tradition and part of the birthday celebration. 🌿There were many waiters at this place. Each one passing by would pay attention to the dining experience at your table. Whenever I wanted to call a server, as soon as I looked up, one of them would already be approaching after making eye contact. So the whole dining experience was great. It was to the extent that I would happily pay a bit more for the service charge at the end. 🌿Besides that, I’m not sure if it was because they saw me dining alone and thought I might be bored, but they seated me directly opposite the kitchen pass. I felt like I watched an episode of the not-so-tense version of “THE BEAR” that night. The chef and the assistant were in harmony, smiling all night without any arguments. The most dramatic part was probably the use of 100 spoons. The chef hand-pinching any dish was as exciting as it got.
