Finca Minimal — Restaurant in Distrito Perdriel

Where do I even begin! Our experience at Finca Minimal was incredible. It was the last stop on our 3-day adventure of wine tastings and winery tours and it was the perfect way to end. It is unlike any of the other wineries -- it is actually more like a small farm. We were greeted and told we could explore the farm, go see the goats, walk around a bit before lunch. Lunch was cooked in an open outdoor kitchen/fire just a few feet from us by the amazing chef Charlie! He came to the table to explain every dish to us and make sure we were doing well. We had an incredible dining experience at Finca Minimal. This isn’t your typical winery—it’s an intimate and personal setting where the owners welcome you into essentially their own backyard. The chef prepared a fantastic multi-course meal and happily accommodated two vegetarians. Every dish was unique, full of flavor, and clearly made with passion. The service was amazing.
