Hands down the best Banh Mi Iâve ever had, and Iâve had a lot of Banh Mi in my time.
I grew up near Cabramatta in Sydney which has one of the most vibrant Vietnamese cultures outside of Vietnam, and we are blessed with quite the selection of local places who never fail to disappoint.
But now, Iâm disappointed simply because I will now need to travel to Zillmere for the best pork roll!
When comparing banh mi from the shops in Cabramatta, I came to the conclusion that the roll itself was the deciding factor in what makes a banh mi succeed, as it has to be crunchy yet still maintain a soft and light interior. The fillings were mostly the same, and didnât vary much between vendors.
After having tried the banh mi here, I have changed my mind; indeed, the fillings count.
However, letâs start with the roll, which is a banger of a roll. Light and fluffy on the inside with that irresistible crunchiness that greets your ears as much as it does your fingers as the shell cracks with slight pressure.
I consider the hallmark of a great crunchy roll is the amount of crumbs it leaves on your shirt, and this roll has it in spades. A mixture of large and small crumbs left my shirt littered with shards of perfection.
The filling, oh sweet baby Jesus, the filling!! This is totally different to what the norm is, which is refreshing, and quite honestly, revolutionary.
The pork is marinated and sliced, then cooked, instead of the traditional style of sliced pork and luncheon meat. Donât get me wrong, the traditional style is still great, but this blows it out of the water.
Iâm a car guy, and the best way to describe how far this roll is evolved is by comparing it thusly- the traditional style is a Ford Model T and the banh mi from here is a Rolls Royce Spectre.
The meat has a slight sweetness to it, with hints of five spice, coriander, ginger, and garlic. None of the flavours are overpowering, as they merge effortlessly, complimenting each other as they come together to be a tour de force of flavours in your food hole.
The crunch of the roll, and the flavour of the filling make this banh mi the most perfect example I have ever experienced.
As I mentioned, I grew up near Cabra, plus Iâve made it a tradition to visit Hong Ha in Mascot when doing airport runs, and Iâve visited Vietnam and had banh mi in its home, but this is by far the best example Iâve had.

However, the last 2 weeks have been a hit and miss. Two weeks ago the crispy pork was oily and the bread was not fresh.
This weekend the quantity of crispy pork in the banh mi was half of what they used to put before and the pate was non-existent.
I hope next week it would be the same, amazing crispy pork banh mi my wife and I used to love.
Update 23/02/2025: Last week we had the same crispy pork crackling banh mi and they were very close to the quality from last year. However, the quantity of pork was obviously less.
Yesterday at 11am we had the worst so that makes them 1 out of 4 which means the quality has gone down from last year. The pork was dry and the skin wasn't crispy. Looks like they either were serving the ones from the previous day or the quality was just bad.
It was just not the same as last year and I hope they can fix this. In the meantime, it's not worth playing the guessing game if we'll get the best banh mi, average...
