The Cheese George has a semi-hard crumbly texture, with a natural rind and sharp savoury salty cheesy flavour. . Sampled the Cheese Platter (AUD $55), which was served with Cheese C2, Cheese George, and Cheese O.D.O. (One Day Old), the latter of which is made from unpasteurised cow's milk, aged for only 1 day. Marinated in olive oil, garlic, red chilli, black pepper, and chives, the Cheese O.D.O. (One Day Old) has a soft sticky texture, without any rind and milky sweet salty earthy sour peppery spicy vegetal flavour. .
