We had the absolute pleasure of dining at Ethos for New Year’s Eve, and from start to finish, it was an unforgettable experience.

The food? A solid 10 out of 10. Every dish was beautifully crafted, but the steak was out of this world - easily one of the best we’ve ever had.

What truly made the evening exceptional, though, was the impeccable service. From the moment we arrived, Michael greeted us warmly, introduced himself, and asked for our names - a small but meaningful gesture that set the tone for the night. Not only did he remember our names throughout the evening, but he also checked in frequently, ensuring everything was perfect.

Michael wasn’t just professional—he made the experience fun. He engaged in conversation, shared some great jokes, and made us feel genuinely cared for. He went above and beyond, inviting us to enjoy our dessert in the lounge and even treating us to a taste of an incredible port wine that we loved so much, we had to take a bottle home.

With Michael, we didn’t just feel served—we felt looked after. It was hospitality at its finest, and he made our New Year’s Eve truly special.

Recently, I had the pleasure in dining at Ethos in Bowral with a group of colleagues and it was a memorable experience. From the moment we walked in, the warm ambience and stylish decor set the tone for a relaxed and enjoyable evening. Ethos is a rare gem and was the perfect blend of classic fine dining with a modern twist.

The menu is simple and does not overwhelm. The Chicken Liver Parfait starter was a standout - so smooth and delicious. For the main I had the Salmon which was cooked to perfection. Each dish was beautifully presented and all 7 of us in our group enjoyed a fantastic meal. It wasn't just the food that made our night special however, but the service we received. The host Michael was an unexpected delight and went over and above to ensure we had a great evening. Michael made us laugh and was attentive, without being intrusive. Service as high a standard as this is so rare these days, and it's honestly what's sets Ethos apart from other restaurants. Our group has been fortunate to dine in many of Bowral's restaurants over the years but Ethos will now be our go to in future. We can't wait to return...

We recently stayed at Links House and booked Ethos Restaurant for dinner. We had an amazing experience and I can't recommend it more highly. The dining room is small and cosy and the food truly exceptional. The absolute stand-out element, which I note others have commented on, was the service. Both Michael and Ross took great care of us. I had never met a waiter as warm, genuine and natural as Michael before and his hospitality was second to none. I observed the way he connected with everyone in the restaurant and made them feel included and special. There was such a great vibe with all the diners being at ease and naturally conversing with everyone and I observed that as people walked away they, along with my husband I, felt as if their spirits had been lifted by the whole experience!
