Words struggle to properly describe #food but I will try. It is an amazing experience of culinary art which left me satisfied on multiple levels. Firstly, the restaurant is run by only two people, two very friendly guys who make you feel welcomed and at home. They are attentive and although one cooks and one does front of house both are visible and the share of work seems equal and stress-free. All the food is sourced locally and some of the drinks are actually brewed by the owners themselves. The menu itself is somewhat of a mystery, the creativity speaks for itself and some dishes, the ash tray dessert for example really can’t be described. The beauty of this place is the creativity and no matter what you order, vegan or not, there will be an aspect of the plate I can guarantee you will enjoy. I enjoyed a pumpkin lasagna for example and although I love pumpkin, the numerous flavours whether it be the lentil pastry or beautifully arranged side salad, no flavour outweighs another and the result is a truly delicious exploration of senses. I really cannot complement #food enough on their ability to make such lovely dishes and to do it with only vegan ingredients is even more of a skill that I have yet to find anywhere else in the many countries I have travelled to. It is worth mentioning they do have several non-vegan options too so everyone can enjoy #food! A hidden gem in Nieuwkapelle
From the outside, it’s quiet. A little mysterious. What’s behind those large glass windows? Let’s go inside!
Black and white photos on the walls. Old school charm - literally. This used to be a boys’ school.
“Maene” greets us with a warm smile. We follow him to our table. Aperitifs first. He suggests Picon vin blanc - his grandfather’s recipe. The man lived to 98, so naturally, i say yes! We tasted Negroni as well. The way “Maene” prepared it will probably now be your go-to setup for how you’ll always want to have it. And this was just the beginning!
Plates start to arrive. Wow! Each one is a piece of art. Petals, herbs, colors that seem too perfect to eat. But we do. And we’re glad. Flavors layer, build, surprise. Nothing expected. Everything intentional. Somewhere between course three and four, we stop guessing what’s next. We just trust the chef Dave. The garden outside? That’s where many of the ingredients come from.
The final course hits the table. It looks and smells familiar. Smoky. Sticky. Like ribs. Except it wasn’t! Yes, you guessed it right, it’s all plant-based. But no one’s missing anything here! Each dish comes with its perfect pour. Wines matched with care, never overpowering. Always complementing.
