Ciao is a roadside shack and seems popular with backpacker. I arrived at 18:00 which is opening time. There were already 11 people waiting to order. I ordered a pizza with sweet pepper and mushroom. I then waited. More people arrived and as there were no seats some 'late' arrivals didn't stop. And I waited. Lightning was flashing in the distance and I hoped it would not rain. And I waited. I read the news. Waited. Checked my email. Waited. And bit my nails. Finally after 75 minutes the pizza arrived. It looked OK but why the 2inch rim without any topping?! Took a bit. Nice taste but oh, way too much flour on the base. I did eat it but when I finished there were people who arrived before me still waiting.
It seems that all the dough is made to order. Ok, they want to be fresh but even some of the top 5 star Italian restaurants pre make their dough. Making gnocchi and pasta could be done during the day and stored in an ice box. Even making 20 portions would give a faster service. And think about getting another oven for the pizzas.

Food was fantastic, very delicious and yet did not come attached with any of the post meals guilt after the meal. My wife rarely finds genuine Italian pizzas tasty as she likes those common hot dogs pizzas along the streets, similar to the overpriced Pizza Company ones. The pizza we had here was one of those very rare ones she liked, even though her favourite seafood and sausages were missing.
Portions were big and we didn't have to eat 14 hours after the meal.
The service was good and the lady boss(I assumed?) provided good suggestions as to what I should eat. And she gave recommendations based on her understanding of tastes and not just blind ones. My wife is Khmer and she said only to try 4 cheese pizza if my wife likes cheese.
Do yourself a favour and rent a scooter to come here to eat one of the best Italian foods...
