🧐Just like how Malaysian-Singapore famous “Hainanese Chicken Rice”, or say Desi-Indian dishes like “Chicken Manchurian” did not actually originate from Hainan or Manchuria - the same can be said about “Wan Tan Hor” despite being a Cantonese-named noodle dish.
🍳”Wat Tan Hor” literally means slippery egg flat rice noodle in Cantonese, but was a product of Cantonese immigrants in “Nanyang” ie. how the region of 🇲🇾🇸🇬Malaysia-Singapore was referred to way back when. Today, one can find “Wat Tan Hor” in most “Dai Chow” or “Zi Char” (similar to 🇭🇰Hong Kong’s “Dai Pai Dong”) eateries respectively in 🇲🇾🇸🇬. But even in its ubiquitous availability, it’s still not easy to get this dish right!
The “Hor Fun” or rice noodle needs to be briefly wok charred to infuse the maximum amount of smoky “wok hei” 🔥flavour without tasting burnt.. And there are two important elements to the gravy - (1) the flavours need to balance with distinct cues of the garlic, the mix of seafoods and meats used and freshness of the “choy sum” vegetable🥬; and (2) the right smooth slippery texture without getting “clumpy” which means the right corn starch to beaten egg ratio; and stirring in the egg at the right time and pace.
With limited options in 🇭🇰HK, my go-to spot to satisfy my “Wat Tan Hor” craving would be “Paradise Classic”. It’s by no means perfect like the best in 🇲🇾🇸🇬 but when compared to the limited options available in here, “Paradise Classic’s version is as close as it gets.....

On this weekend, we went to Tseung Kwan O visit our relatives. After that we decided to dinner in The Lohas. We walked pass Paradise Classic and saw a 2pax dinner set which costs HKD$688.
🍹Lemon Barley Drink 🥢Singapore Style Deep-Fried Tofu This was sooooooo good and delicious!! There were 10pcs in total and we love it so much!! They have cut it into easy-to-eat squares. There was a crispy coating on the outer layer and the tofu was very smooth. 🐟 Stir-fried Sliced Fish with Ginger and Spring Onion The fish was fresh without any bone and the onion was sweet. 🦀 Singaporean Chili Crab Stir-fried with black pepper, garlic, shallots and oyster sauce. Emerging from the wok is an explosion of spicy and umami flavors that complements the natural sweetness and succulence of crab meat perfectly. 🍚Prawn-infused Ebiko Prawn Fried Rice Prawn broth is first used to cook the rice grains before stir-frying with ebiko and prawns over high heat for smoky aroma. Food: I love their prawns, especially ceral prawns and wasabi mayo. Wasabi strength seems to change from time to time so it's always a surprise how much it attempts to leave from my nose. I personally love wasabi though, but inconsistency is strange.
Tea time menu is a steal. Menu is of course available only in Chinese, but luckily google translate translated it easily. Sweet & sour pork and barley lemon drink are my personal favorites for the price only slightly more than a big mac meal.
Service: like whoa, difference between this branch and Paradise Dynasty in TKO is like night and day. Where PD TKO I feel every time like a VIP as their service is extremely polite, but PC Lohas is more original Singaporean style - uninterested waiting staff, slow service, things ordered often missed and so on. It's not bad service - and feels just like Singapore - but I wouldn't dare to rate it above 3.
Atmosphere: as in all branches, quite boring. But it's not the reason you go for visit; it's more like you visit despite boring atmosphere - but...
