This little hotspot is in Manzanillo, Costa Rica. Manzanillo hosts beautiful beach fronts accessible to the public and provided are tables and seats of concrete and very decorative. This is a small fishing town that host a few great restaurants, starting with Cool and Calm. This restaurant greets guests right at the entrance of this small but sweet fishing town. Andy, Stella (his wife) and Dennis (a Canuck Expat) are my personal friends and I have to boast that Andy and his smoker, cook up the BEST CARIBBEAN CHICKEN you have ever tasted! Fantastic food Mr. Cook! How befitting is that name for an amazing restauranteur. Andy is of local flavour and his wife is an American Expat and all three make it work! By the way, Andy's sister owns the restaurant across the street named, Mista Cook! You can also pop in for good Costa Rican lunch or dinner! For an added treat, take one of Andy's fishing tours on his boat and catch your own dinner! He will cook it up on his smoker fuelled by coconut husks! How cool is that?! Hands down the best seafood we’ve ever had – fresh lobster, jumbo shrimp, red snapper, and the most flavorful jerk chicken, all cooked to perfection over an open wood fire grill. Chef Andy is amazing – his passion and skill shine through in every dish. Read moreWow - this resto is really great. I've been in Costa Rica for over 6 months and have eaten at many many restos - most are disappointing and don't live up to their reviews. I would say the opposite is true of Cool and Calm - their google rating doesn't do them justice. I ordered their grilled red snapper and threw in a rib on the side - I'm a boss like that. Honestly, this was the best fish I've eaten in the 6 months here - so perfectly cooked and flavourful. The rib was delicious as well - super juicy and that basting sauce was next level!!!! They use coconut husks to fire the grill and I think that flavour adds something extra special. Definitely worth a trip to Manzanillo just...
