An excellent lesson on sustainability in the food industry. Restaurant Moment was started by a passionate couple with no food industry experience who wanted to use the restaurant to communicate sustainability concepts to an audience who may not typically think about sustainability (eg. Foodies).
Fine dining restaurants are renowned for its carbon footprint from transporting exotic food products and food wastage. In contrast, substantially all of the plant-based ingredients used by Restaurant Moment are grown in its own vegetable garden and farm. They increase biodiversity by reintroducing heirloom plants and growing wild plants. They also have their own bees to help pollinate their plants
Water is recycled, food waste is fermented to compost and made into soil.
Even the building itself is built using sustainable technologies. The outer walls use bricks made from compressed straw.

We didn't know that this place is vegetarian only, but if You have any allergies or intolerances You have to tell it in advance and when we said that we are vegan they asked kitchen to make vegan options, but couldn't promise anything, but I'm sure our vegan option was even better that original one even though chefs were improvising!! It was absolutely AMAZING! Sometimes it was even impossible to tell what You are eating even though You know that vegetable very well. They do absolute magic with food! Everything is so tasty and balanced, from the taste till the size of a portion and number of dishes! And everything they use for cooking they grow themselves! Absolutely LOVED...

Restaurant Moment is located in Friland, a pioneering village that proves you can build efficient and modern houses with local materials and Moment perfectly encapsulates that with its food. The food is New Nordic with using unusual local ingredients in creative ways and the results are delicious. There's a large list of Natural Wine, or Moment's own fermented drinks (haven't tried the latter). The supply chain is firstly based on their own large greenhouse, then partnerships with local organic and biodynamic producers and lastly organic products from other places.
