SOO restoran / Maidla Nature Resort — Restaurant in Rapla vald

My wife and I scheduled the majority of our trip to the Baltics around dining at Soo staying at Maidla Nature Resort. 2 hours prior to dinner we received word from Maidla staff that the chef called in sick. It is unclear if he was genuinely ill or if there weren’t enough customers to bother coming in. Regardless, we found it strange that a Green Michelin-starred restaurant had no backup chef. I had an awesome dinner at SOO restaurant at the Maidla Nature Resort in Estonia! It was super intimate with just 5 tables, which made it feel really special. In the middle of dinner, we got a private tour of the old historic mansion on the property – such a cool touch. The food was amazing, and the chef explained the background of each dish, showing how much care went into everything. The multi-layered crispy eggplant dish was a standout. Everything was almost perfect. The food was great experiments and very interesting approaches. But like all x course sets, one was hungry at the end.

Wine pairings were decent, somehow just 6/8 of the wines were sadly not pleasant to me personally. They did compliment the dishes well enough, but a little something was still missing for me.

Service was superb. Loved the presentations, the attitude, the rigor at the same time of also being pleasantly friendly. Perfect.
