We had the full "Universe" dinner menu with wine pairing as well. The food was very good, unique in it's flavor and presentation and well done. The crustacean / shrimp was our favorite, and done in a unique fashion. The service was uniquely disappointing however.
A few issues: The original napkin I got was heavily stained. They replaced it after mentioning it, but it was very obviously stained in multiple places. While I did the wine pairing, my wife decided to do a glass on her own. She asked for a recommendation that wasn't too fruity. The person (I'm not sure if the wine person was actually a Som), suggested the most expensive white on the list. She got it and was poured a full glass and didn't get to taste it. After tasting it, it was very fruity. We looked up online, and the first tasting note for that wine was fruity, so I'm not sure how they missed this. We used ChatGPT to pick a different wine and got one much more to her liking. Service for wine pairing was very poor. For the pairing, I often got wine after the food was already served, so I was sitting with the food getting cold waiting for them to notice. Also, there was little explanation of the wine other than what was on the front of the label. Drink service was poor as well. My glass was empty and 4 people attended to the table in about 15 minutes. I had to ask someone myself to get more water after that.
It felt like everyone was in a rush and it was difficult to find someone nearby who was attentive. There was very little conversation and just being very quick on serving the food and drinks.

With heavy hearts, we must leave Restaurant Cédric Burtin a low score. The essence of our disappointment? At 90 euros per person, the portions were far too small to justify the price, leaving bread as the star of the meal.
To be fair, the presentation was good, and the chocolate ring with caramelized mandarins was a highlight. But the flavors—while clearly crafted with care—were often too intense, with sauces and dishes that overwhelmed rather than delighted. The marshmallows at the end were so rubbery they felt better suited for a catapult than dessert.
The bread, while delicious, came from a bakery in Chalon and made up the bulk of what we actually ate. For a meal costing 360 euros in total, we couldn’t help but feel that value was lacking.
The ultimate question: would we return? Sadly, the answer from all four of us—three seasoned diners and one fine-dining novice—was a firm no. Each story incorporates the importance of the producer of the ingredients and pays homage to local history or the life and family of the Chef. The presentation is stunning. Not overdone or austentatious but elegantly presented with the best ingredients. We were invited to visit the kitchen. It is well organized precision under the constant leadership of an extremely talented Chef. Cedric Burtin is the definition of a Michelin starred Chef.
