Café Brochier — Restaurant in Die

This has to be one of the best B&B hotels in the area. From the moment you arrive, the owners take care of you and the only regret was having to leave. ||||We stayed in a double room with a great ensuite shower that had a monsoon type shower head, just ideal after a day out cross country skiing. ||We asked to see the other two rooms, each of these were of the same exacting standards and the four bedded room has an open fire place.||||The owners have sympathetically restored the dining room with wall frescos depicting areas of the Vercors. Throughout the rest of the building there are fabulous photographs by a local artist showing local winter scenes.||||I had read great reviews about the food. We stayed with half board option, the evening meal was a real delight and of the quality you would expect to find in a top class restaurant. Breakfast was also of a high standard. ||||The stay was relaxing, meals are delivered when you want to eat, not the other way around. ||This was amazing value for the money, worth every penny and more. ||I cannot wait to come back, this is now my favourite place to stay when visiting...

Il y a ces restaurant où l'on vous demande si ça a été et dans lesquels ont répond mollement et puis d'autres dans lesquels on s'exprime avec sincérité.

Nous y avons mangé avec beaucoup de plaisir. L’accueil est chaleureux, le rapport qualité-prix juste excellent. Ici, les produits de saison sont à l’honneur, issus de producteurs locaux (ils sont crédités à la carte façon générique de film), avec une touche d’inventivité juste ce qu’il faut, sans dénaturer les saveurs.

Avant de passer à table, on peut profiter d’un verre sur la terrasse, devant une jolie bâtisse au charme authentique (la serveuse a été capable de me faire l'historique de la maison, de sa façade, et de me parler des génoises.....). La salle, elle, est élégante avec son vrai parquet, et jusque dans les détails – les couteaux en acier référencé – tout respire le soin et le goût du travail bien fait (la douceur des serviettes).

Mention spéciale à la panisse, ce plat provençal modeste, revisité ici façon pissaladière accompagnée d’un mesclun assaisonné au garum. Un vrai régal, mon coup de cœur salé (même si les asperges étaient au top aussi).

L’échine de vertacochon, bien saisie, fondante, était sublimée par un fenouil confit délicieux. Petite réserve sur la cuisson des cébettes, un poil trop peut-être, ce qui leur fait à mon avis perdre une partie de leur caractère aromatique (mention sympa pour la harissa de rhubarbe à la saveur aigre-douce).

Le chenin s'accordait parfaitement avec ces plats ensoleillés.

Et pour finir en beauté : un baba pomme-calvados. Oubliez le traditionnel rhum, ici l’eau-de-vie avec l'eau de pomme rehaussés de quelques graines de fenouil est reine, une crème fraîche juste ce qu’il faut d’aigre pour accompagner la compotée de pomme, et d’une belle générosité normande. Une vraie réussite. Mon coup de coeur sucré.

Dommage que nous n’habitions pas le coin… Ce restaurant deviendrait sans aucun doute notre cantine. On cherche souvent, on trouve assez rarement, là c'est une très bonne pioche (merci Anne-Céline). C'est plusieurs semaines à l'avance qu'il faut réserver, ce n'est pas pour rien... On aimerait que d'autres s'en inspirent... Cuisiner des aliments...
