My husband and I had many restaurants "out of the path" and in "strip malls" in USA but never understood why people were so surprise to find us there, good restaurants can be anywhere and we know that! and we found le bistronomique what a great moment we had ! Knowing that they were short in staff in the kitchen ( chef was by himself) as chef told us while we arrived (yes he was even greating customers!) and that they were packed and found us a spot anyway (not in the main dining room and that was even better for us) we were excited about la suite.

The wait staff was fast because busy , but extremely attentive to details ( specially the young waiter) and super friendly and knowledgeable about wine (the sommellier was very nice and in a fun french mood)

THE FOOD we had to start an amuse bouche emulsion de gazpacho et spuma fume

two glasses of wine that sommelier choose for us matching our order 1 verre blanc Pouilly 1 verre rouge Terre des Anges

Veloute de chouxfleur a l'huile de truffe

2 suggestions of the day Filet de veau, foie gras, sauce aux cepes avec puree de pomme de terre Saumon d'Ecosse avec noix de St Jacques et risotto Carnaroli

1 dessert suggestion feuilletee pomme et frangipan Ile flottante

and that......my friend was our lunch LOL every dish was very well presented and tasted every ingredient,, nothing was overwhelming, a party for the palate

we now live in the area and we will return and we will bring friends and customers that will come to visit us in the beautiful gorges du Verdon

see pictures , but be aware might lead you there faster then what you think and sorry for my english, I was not writing perfectly already before while living in uSA but now that I'm back to...

What a treat! We were up driving around the lavender fields in the Valensole area and tried this for a lovely lunch. The restaurant is in two parts: the fine dining (Michelin star) restaurant and the Bistro. We tried the bistro and were amazed at the quality and reasonable price. We were there on a weekday and were able to get a table without a reservation and had a wonderful lunch for ~€30/person. The chicken Tagine dish was inventive and had spices from the middle east, while the deconstructed Duck confit dish was a hearty provençal dish. Both were beautifully presented and service was good. they have an extensive wine and liquor selection, so you just can't go wrong. Très déçu, j’ai vraiment pas passé un moment agréable et c’est bien dommage ! Je demande au « serveur sommelier » que la cuisson de ma viande (le burger) soit bien cuite car je suis enceinte et pas imunisée contre la toxoplasmose, celui ci m’explique qu’il font de la cuisson à basse température ici, ok mais cela ne me convient pas car celle ci n’est pas assez cuite à cœur. Il m’explque que si il demande au cuisiner de cuire d’avantage la viande, celui ci va « marroner » car la viande c’est pas du surgelé et qu’il s’embete déjà à faire la cuire à basse température... on rêve ! Il fini par me proposer de prendre la responsabilité au près du cuisiner et de lui demander de me la faire cuire à point. En plus de cela il nous expluique qu’ici ce sont les meilleurs, qu’ailleurs ils ne savent rien faire. Bref très lourd et surtout un gros manque d’humilité. Mon plat arrive. Ma viande est bleue à cœur, je ne dis rien, j’essaye de manger tant bien que mal ce que je peux. Il vient me voir pour savoir si la viande me convient, je lui explique que je ne vais pas en manger plus car elle n’est pas assez cuite pour moi, il me ressort son speech de la basse température, bref. Il propose du vin à mon conjoint, moi je n’ai pas le droit boire visiblement, j’ai fini par demander à boire à la fin de mon repas. Même pas une bouteille d’eau. Pas de pain non plus. Alors que ce sont des plats en sauces. Il fini par me demande si je veux qu’il aille se faire engueuler pour moi pour recuire ma viande alors que j’ai fini de manger le reste de mon plat. Pourquoi ne pas m’avoir écouté et proposer cela dès le départ ? Bref incroyable j’ai jamais vu ça. Que ça emmerde le chef j’en ai rien a carré, je paie si je veux que ma viande ça soit une semelle c’est mon problème. Food was good but the experience was marred by the service. For the peach dessert, the presentation was different from the rest of the customer (our gelato was served in a small bowl but others were more elaborate in like a dry ice dome). We asked the waiter because we were curious, his answer was "I don't know". We would have been ok if he said perhaps they ran out of domes etc.. Service was between dishes were too long.. Took close to 30 mins for them to serve each course. When we left and wanted to thank the chef who was at another table, he did not even turn around to acknowledge us.

Le Bistronomique : Nous avons réservé une table pour 2 Bien reçus, nous avons été installés dans la salle qui est cernée de vitrines dont certaines réfrigérées, qui exposent des produits tels que des bouteilles, conserves, huile d'olive, etc... que vous pouvez acheter. Le menu du soir est imposé, pas possible de choisir les plats à la carte qui sont proposés le midi. Menu diner donc, avec des petits toasts à tartiner avec une compoté maison, très bons. Puis amuses bouches, gaspacho de tomates, avocat et crevette sauvage. En entrée, du saumon et un œuf parfait cuit à 64 degrés. Un délice. Pour les plats, la pêche du moment et compresse de paleron, joue de bœuf. Enfin le dessert, pour nous deux, tarte au citron façon Bistronomique. Vraiment très bon tout ça. Une petite coupe de champagne offerte, nous avons apprécié ce moment et cette cuisine. Concernant les prix, le tarif est quand même assez conséquent mais vous ne serez pas déçus. Je vous recommande vraiment. Places de stationnement à proximité immédiate.
