This is THE place for carnivores around Limoux! The food is excellent in quality, quantity and variety.
The soups are hearty and delicious when served hot in season, and tasty and refreshing when the gazpacho is served in the warmer weather.
The charcuterie is wonderful with many different varieties from around the area and from Corsica. The foie gras is luscious. Best of all the charcuterie is the house pate de foie de vollaille (chicken liver pate) We would quite happily dine on it alone. This is accompanied by crusty white bread and beautifully salted butter. We have not found such good bread and butter anywhere else in the area.
We are only working our way through the choices of mains but sufficeth to say, we have loved each and every one we have tried so far. We have had pork in a number of forms, duck, beef and all were delicious.
Desserts are a final sweet flourish to end gorgeous meals. But to be honest, after such great savoury offerings, desserts take a step back in importance.
The house wine is very reasonable and very good but for those who wish to indulge, the wine menu is super.
The service, while always professional, is warm and welcoming. Monsieur le Chef is king of his domain and takes great pride in delivering excellence with his attention to detail. His wife manages the tables with charm and efficiency and is obviously respected and liked by her staff. It is a pleasure to see how this restaurant is run and to benefit greatly in the process.
We have tried the lunch during the week at €15.00 for three courses. Dinner in the evenings for €28.00 for four courses and €34 for four courses including foie gras. We have not yet managed to try the five course menu as it would require us to stay overnight to be able to eat all the food included! All are to be recommended.
The new address for La Taverns a Bacchus, which used to be in Pieusse, is a lovely old Maison du Maitre which has apparently been vacant for many years. Now its heart has been restored and its doors are open to welcome diners to a haven for those who love good food.

The parking lot greets you with free-roaming chickens scratching around your tires, a boar rustling in the nearby brush, and just to make sure you are really paying attention, a regal peacock standing sentry beside a bathtub like itis the most natural thing in the world. It is whimsical, a little wild, and entirely fitting for the kind of meal that follows. • What unfolded was a three-hour stretch of uninterrupted eating and drinking… The kind of lunch that dissolves the concept of time. It began with a deeply comforting soupe paysanne, hearty and full of soul, followed by a generous charcuterie board layered with homemade foie gras, pâté de campagne, and an unctuous, deeply flavored pâté de foie de volaille. • For the mains, we had the magret de canard which was carefully roasted in the open cheminée, its skin perfectly crisped, smoky and tender. I went full traditional with a tartiflette that was unapologetically rich, bubbling with melted cheeses, and jambon indulgent in the best possible way. • And just when we thought we could not possibly eat more, dessert arrived like a final, elegant flourish. A boozy, golden limoncello baba and a classic île flottante, airy, cloudlike meringue floating on a pool of crème anglaise, nostalgic and perfect. • The ambience inside hits that rare sweet spot between rustic, quirky and refined. Read moreExcellent restaurant and always popular so work booking a table in advance. It's located a short drive outside of Limoux so definitely a destination restaurant and not one you would walk to.
The place is located on a hillside and is much like an old manor house. We dined outside under a large covered terrace with views over the country side.
As for the food, its unique in that you would call "country" style. Huge portions of various meat and veg dishes based on what is in season. Make sure you go with a large appetite as we were unable to consume all that came with our fixed price meal.
Well worth a visit if you want a change from the usual fare offered by tourist restaurants.
