Where to start.. I arrived around 9 PM and the owner (Julien) had to check with the chef de cuisine (his wife, sorry missed her name) if I still could get something. Well I did, and let me tell you it was the beginning of the most fantastic evening. Julien welcomed me warmheartedly and recommended different dishes and drinks. Since I love Japanese cuisine, I knew straight on that I'll have Goyza and Ramen. Gyoza flavour was very good. But the Ramen (next time with Udon noodles) was a different level. Its all about the (vegan) broth, perfect Umami! As dessert I had the chocolate Mochi with cream and some special chocolate/cacao cubes which literally created a taste meltdown in my mouth. If that wasn't enough, I had a lovely chat with the chef, had to praise her skills. After the restaurant was closed, I sat there with Julien for an hour, over some Sake and chatting about life. We travelled hundreds of kilometres for our first visit to MARU まる in Montbéliard and from the moment we stepped inside, we knew it was going to be something special. Julian welcomed us with such warmth and genuine hospitality that we instantly felt like welcome guests rather than first-time visitors.
In the kitchen, the talented chef worked with quiet precision and an unmistakable passion for her craft. Every element of the evening, from the atmosphere to the care in service to the perfect balance between elegance and comfort, felt completely in tune.
It was our wedding anniversary and thanks to Julian and the chef, it became a celebration we will never forget. We left not just full, but truly grateful for the kindness, artistry, and memory they helped create.
Thank you both for making our special day even more special. MARU まる is not only unforgettable, it is the kind of place that makes you start planning your return before you...
