A great crust and seared bottom. The dough is fermented for 48 hours and the crust shows the result with its pliable, chewy taste.
It could use a little more semolina on the base to tighten the crust IMO, but that is a slight suggestion. A generous amount of toppings and cheese.
Itâs the best pizza within at least 40 miles of the Languedoc region. Neapolitan pizza that hits a high level of quality with a chef who knows what heâs doing and cares in what he does.

Incroyable, sous ses airs bourrus, nous avons passĂ© un moment familial avec un personnage d'une gentillesse, d'une humanitĂ© et d'une gĂ©nĂ©rositĂ© sans pareil... La pĂąte des pizzas cuites au feu de bois Ă©tait juste excellente (rare de voir 48h de repos pour la pĂąte dans une pizzeria) Garniture fraĂźche et de qualitĂ© ! Si seulement tous les commerçants mettaient autant de coeur Ă l'ouvrage, les notations maps iraient jusque 8â Plus que d'aller Ă Narbonne, venez passer un agrĂ©able moment sur la place de ce petit village...
