Did you know that today is Sustainable Gastronomy Day? For those, who don’t know what sustainable gastronomy is, it means cuisine that takes into account the provenance of ingredients, how the food is grown and how it gets to our markets and eventually to our plates. @michelinguide introduced Green Star annual award in 2020 in order to highlight restaurants at the forefront of the industry when it comes to their sustainable practices. It means that Green Star restaurants offer dining experiences that combine culinary excellence with outstanding eco-friendly commitments . In order to learn more about history, values and engagements of a Green Star restaurant, I spent a day with chef Cybèle Idelot whose restaurant « Ruche » ( Domaine les Bruyères near Paris) has recently been awarded a Green Star by @michelinguide . The domaine is situated in a peaceful countryside near Paris where Cybèle with her husband opened their restaurant Ruche and where you can feel the strong connection between the restaurant and the garden just beside. It’s there that Cybèle grows her fruit, vegetables, edible flowers etc. She focuses on seasonal and zero waste recipes in her cuisine. During the day, we saw Cybèle working her magic with her teams, we discovered her garden and also learned how to forage wild edible herbs and flowers that Cybèle uses in her dishes. We cooked our own bread and visited a neighbouring @fermedelatremblaye that also supplies the restaurant . Later in the evening we savoured the dishes made by Cybèle and tried wines selected by her husband, who is a sommelier at the restaurant. To go further, the Domaine even offers 5 rooms if you want to spend a night there🌿 You will find more about this day plus a list of Green Star Michelin restaurants in Paris region in my Stories today. What a feast and memory for a lifetime! We are now raving about this hidden gem located less than an hour away from Paris... It is a true first class "farm to table" experience as the very talented and passionate chef Cybèle uses her own "potager" to create seasonal mouthwatering dishes where you rediscover the quintessential flavors of simple ingredients. It is also worth mentioning each plate is an ephemere art piece as delectable to the eyes as it is to the palate! The service is impeccable and the simple but "chic" atmosphere makes it a perfect combination to fully enjoy such a refined experience! We chose the 7 course tasting menu and as much as we were there for 4 hours, the time flew by and we could have stayed even longer... We can't wait to go back but we unfortunately leave 5,000 miles away...

It is a true first class "farm to table" experience as the very talented and passionate chef Cybèle uses her own "potager" to create seasonal mouthwatering dishes where you rediscover the quintessential flavors of simple ingredients. It is also worth mentioning each plate is an ephemere art piece as delectable to the eyes as it is to the palate! The service is impeccable and the simple but "chic" atmosphere makes it a perfect combination to fully enjoy such a refined experience! We chose the 7 course tasting menu and as much as we were there for 4 hours, the time flew by and we could have stayed even longer... Un bon restaurant dans un cadre très calme et reposant. Le jardin en permaculture peut se visiter et ajoute au charme de l’ensemble. Le service est de bonne qualité sans être au top et manque un peu de chaleur, par exemple il faut insister pour avoir plus de pain. Les tables sont confortables et bien espacées. Globalement le concept est sans doute plus séduisant que le résultat culinaire. Quelques défauts mineurs qu’il faudrait corriger : tout d’abord les quantités (pour le menu à 69 euros en 4 services avec deux entrées végétales) sont juste suffisantes ; on ne repart pas avec la faim mais c’est limite et je ne suis pas un gros mangeur ! Le dessert en particulier est vraiment chiche. Ensuite la qualité des vins servis au verre n’est pas au niveau ; le vin orange est franchement mauvais et le vin blanc juste acceptable pour 13 euros. Bien sûr il y a une carte très fournie, mais il faut commander une bouteille ou l’accord soit 55 euros de plus ; pour un restaurant qui promeut le non gaspillage, ne pas proposer plus de choix de qualité aux personnes qui ne souhaitent pas s’alcooliser ou gaspiller une bouteille entière est problématique. L’eau micro-filtrée et gazéifiées est à 5,5 euros ….. En ce qui concerne la cuisine, c’est globalement bien cuisiné avec de la recherche. Dans le menu proposé j’avais pris tous les plats végétaux mais j’ai aussi goûté la ballotine de volaille. Le menu dégustation à 95 euros propose aussi du poisson et du magret de canard. Il est dommage que le menu à 69 euros ne propose pas aussi la possibilité d’un plat similaire. La ballotine de volaille était un peu sèche et fade, ce n’est visiblement pas la spécialité du chef. Parmi les plats végétaux, la betterave avec nage de cerise et sarrasin est très réussi. Individuellement les autres plats sont bons, le problème principal vient de la linéarité de l’ensemble et le manque de mâche et de croustillant. Il est difficile de ne faire que des plats à base de légumes/fruits qui deviennent mous à la cuisson. Tout cela finit par manquer un peu de peps et de relief. Je n’ai pas noté que les légumes avaient plus de goût que ceux que l’on déguste ordinairement. Un autre petit défaut est que la composition des plats est un peu trop complexe avec trop de mélanges. C’est un défaut assez courant dans beaucoup de restaurant gastro moderne. Donc au final, un restaurant avec du charme, à la campagne, amusant à essayer et un jardin à visiter, et certes assez inhabituel en terme culinaire, mais un peu cher et gustativement plus surprenant que vraiment succulent. Cela reste néanmoins une très bonne sortie, et si les propriétaires peuvent corriger les quelques défauts cités, cela ne le rendra que...

Déjeuner le 10/07/2022 4 pers. Bon, le cadre est agréable, sans aucun doute. L'endroit est paisible. Ça, c'est lorsqu'on est à l'extérieur. À l'intérieur, c'est une autre ambiance. Il y a une quarantaine de couverts. C'est pas énorme. Mais il faut savoir que c'est une maison. Et, une fois à l'intérieur (il n'y a pas de terrasse), c'est très bruyant. Il est difficile de mener une conversation. On ne s'entend pas. Ensuite, l'attente. Nous avions réservé à 13h00. Nous sommes arrivés à 13h10. Erreur ! Nous avons attendu près de 40 mn pour avoir notre entrée ! Pas d'excuse de la part du personnel, ça semblait normal. Nous sommes sortis de cet endroit vers 15h00 quand même... Côté qualité, ben c'est pas top non plus. Sur la carte, ça semblait pas mal, mais en entrée, j'ai eu une salade tomates-concombre plutôt classique. Le plat, un peu fade. "nous ne voulons pas utiliser d'épices qui viennent du bout du monde" dixit le patron. Certes, mais l'assaisonnement, c'est la base, non ? Dessert passable mais pas dément non plus. Tout ça pour 55 € sans boisson. Je passe sur la serveuse qui passe 10 fois devant nous en voyant la carafe d'eau vide sans jamais proposer de la remplacer (eau pétillante sûrement type Soda Stream payante). Mais surtout, c'est l'attitude du patron. En gros, si ça s'est mal passé, c'est de notre faute. Nous sommes arrivés en retard sans prévenir (10 mn de retard) et ça perturbe l'organisation de la cuisine. Ah bon. Ben il y a peut-être un problème en cuisine, non ? On avait réservé pour 5 puis on est venu à 4, mais en ayant prévenu par mail auparavant. "non, je n'ai rien reçu" selon le patron. Ben revois ta centrale de réservation dans ce cas ! Aucune excuse, aucun geste commercial. On nous a même dit qu'on critiquait pour avoir les cafés à l'œil. Sur un menu à 55 € ! Votre café il coûte combien ? 10 € ? Bref je ne recommande pas un restaurant qui se moque de ses clients et qui fait payer le prix fort soit-disant pour des produits locaux. Mouais.
