My wife and I traveled to the Aubrac region of France to experience a bit of rural life, and allow me to spend a day flyfishing. No trains service the region, so a car is a must. However, the drive is beautiful and well worth the effort, ascending steep peaks of dense conifer forest and crossing over the stark, pastoral landscape of the Aubrac. The midievel hamlet of Saint Urcize was quiet and charming, with the feel of pre-industrial agricultural simplicity. The hotel, Chez Remise, was run by a gracious and accomodating family, which made our stay so much enjoyable. The accomodations were rustic, yet clean and comfortable. Perhaps the best part of our stay was the food, with a single menu served each night in the upstairs dining room. The food may be the best I've had, which is an understatement, and the service was incredibly welcoming. Furthermore, there aren't enough words to adequately describe the local cheeses. If you're into getting away from the touristy fois gras shops and main-line attractions, and enjoy the rustic beauty of stark, agricultural landscape, this is your place.
