We visited the welcome centre, Maison du Paludiers (highly recommended), and needed lunch. We literally walked around the corner, walked into Brut and had one of the best restaurant experiences of our lives, made even more so because it was so unexpected.

The level of professionalism was pronounced. Gracious reception, gracious seating and what proceeded was a fine meal made even more so by the excellent staff.

In particular, Erwan, the Head Sommelier was outstanding. At the beginning of the meal he conducted a quick personal "survey" and then proceeded to pair wines with each course and according to each palate. Truly a step above. The selections were perfect and, not only that, the discussion that ensued with him and with ourselves elevated the experience.

I'm not sure if we will ever get back to that particular corner of Brittany again, but if we are ever close, we will return to Brut.

It was a very nice experience to eat at this fine dining establishment in Saillé, a little corner of Guérande just off the salt marshes. The restaurant is decorated in earth tones which provide a pleasant background to the chef's creations. The restaurant excels in contrasting flavour profiles. There were several dishes that paired sweet and salty. There was also the pairing of iodinated and umami with oysters, salicorne and unexpectedly mimolette cheese. For dessert I had a madeleine with stilton draped in white chocolate, it was just marvelous. I liked that I had some choice in the menu (mostly because I was able to avoid the pigeon which seems to be everywhere these days). After my meal I took a walk in the nearby salt marshes to work off the calories. I look forward to visiting the restaurant again next time I am...

Lunch menu on Saturday 70 € per person plus wine.

Food very well presented, créative and tasty

Value for money is not there, 70€ is bit excessive for what is proposed. Service is not at the level of prices and ambition - we got wine by the glass and we were not ordered to taste our wine before whole glass was served. No dedicated place to put habdbag. Restaurant is very clearly aiming to get a star, so must remember that for stars it’s not only good food but...

Belle décoration de la salle et présentation des assiettes soignées. Pour le reste, il y a du boulot. Nous avons pris le menu homard « signature », qui est en fait la même chose que le menu normal, sauf qu’ils ajoutent des morceaux de homard. Côté saveurs, la première entrée était trop sucrée, la suivante trop salée, le fenouil du plat trop cuit, la pince du homard servie sans avoir enlevé le coagulât. Deux serveuses discrètes et sympa, mais la chef de salle est hautaine, prétentieuse et de mauvaise foi. Non, le carafage n’est pas réservé aux vins rouges comme elle nous l’a soutenu, par contre carafer au dernier moment est inutile, il aurait fallu le faire quand on l’a demandé, bref, on a laissé tomber le carafage, non sans échanges tendus avec cette jeune fille très désagréable. Les deux bouteilles de vin blanc étaient tièdes. Les millésimes ne sont pas indiqués sur la carte. À 75€ le menu et tant de chichis, vraiment décevant. Au vu des réponses de la direction aux commentaires négatifs passés, plutôt que de continuer à répondre ici de façon insultante, peut-être faudrait-il se remettre un peu en question.
