La CAVA:
Quaint, elegant, and classy. My definition of an excellent restaurant is exceptional service, terrific food, and a clean atmosphere. La CAVA had them all- and more. We were significantly early for our reservation, as our last Castle tour was completely quicker than anticipated. We took a chance at an earlier entry and we were warmly welcomed by Martial and his colleague, an elegant Madame whose name I wished I had known. They pleasantly prepared my Remy Martin mixed drink while meticulously creating a work of art for my wife and friends. We were then seated in a cozy corner of this elegant “cave”, while being served delicious appetizers that we didn’t even expect. Fresh trout and scrumptious rib meat preceded our meal. What a surprise !! Our wait staff explained the ALL FRENCH menu in great detail and knowledge. We all had the TBONE steaks which came out on time, perfectly cooked, and carefully garnished. The accompanying potatoes were prepared with zesty seasonings. Some of us partook of local wine which showed remarkable bouquet. Again, Martial provided exceptional service with his associates. Every request was met with a smile. Dessert and coffees were the same. Creative and mouth- watering were pervasive themes. We went to this restaurant for lunch on a Monday so it was really calm, and we really liked the setting as it is quite special. But the server was definitely "less than interested"... We thought we were ordering the set menu of €20 of "entrée + main" / "main + dessert", but only when we paid did we realize we did not order anything from the set menu, as the waiter never presented us anything from the set menu (it's a little black board that he was supposed to bring to us). And he behaved in such as way that it was like "well sucks to be you"...

The two restaurants near my hotel were closed on Tuesdays. They managed to get me a reservation at Gueuleton, asking if I'd be ok to walk about 2km (I'm traveling by train).
Sure, no problem at all.
I did not check any details online, just the position. No need to, as it was the only place to get some food.
I expected something simple and traditional. Oh no, this place is carved into a rock and is as cool as a restaurant gets!
The food was wonderful, the wine list extensive (also plenty of 1/2 bottles) and the service quick & friendly.
I would have walked 10K for this. Thank you...
