L’Évidence — Michelin Restaurant Review

Our party of four was unanimous in every observation below; this review captures our shared impression.
Pros:
0. Immaculately clean, wonderfully quiet and intimate— a small, super‑cozy dining room with a flawless atmosphere.
The dishes were stunningly delicious. The large tasting menu offered a rich variety, gorgeous plating, and layer‑upon‑layer of flavour. It set a benchmark I will be comparing other restaurants of this level to for a long time.
Warm, heartfelt service. Every question was answered in detail and each course was presented with genuine enthusiasm. Special praise for the elegant lady who seemed to be the owner (or at least the floor manager)—speaking with her felt like catching up with a dear friend. Her easy humour and warmth gave the evening a truly homely charm; even my fiancée, usually very demanding about service, was delighted.
For the first time in my extensive fine‑dining experience, our meal began with steamed, lightly scented hand towels to warm and cleanse our hands. A small touch perhaps, yet so pleasant that I now wonder why more restaurants of this calibre do not do the same.
Cons:
The pace between courses was a little slow—not critical, but the waits did feel noticeable.
Verdict — MARVELLOUS! This restaurant fully deserves every accolade it has earned and more.
We left with an overwhelmingly positive impression and will recommend it without hesitation. On our next trip to the region we will certainly return.

Laura and I also had the Accord of wines which was 3 different wines and a beer ( explanation later). We were welcomed with a small cup of consommé, which was followed by a small taster of sardine and onion.Then we had scallops served warm with a mild ly curried sauce and raw with an acidified sauce both were excellent.Then some foiegras with raw mushrooms and a slightly smoky warm sauce -delicious. A little cleanser of radish salad then on to the main course of yellow pollack served with cauliflower and brussel sprout and a savoury squid ink sauce - this was superb. Surprisingly the wine waiter advised a red from Corsica for the fish and this was an inspired choice. The previous 2 white wines were unknown to us and matched the dishes perfectly. But his biggest surprise came with dessert when he recommended a brown beer from Corsica to go with the pear and chestnut creation -it really worked and was a first for me. Sometimes the service in high end restaurants can seem a bit snooty and intimidating but the team were very friendly and efficient. My only niggle and it is a small one is that the chairs were a little too hard and the plates had a tendency to spin on the glass placemats. Read moreThis restaurant is a true delight. In a small town in Val de Loire, the head chef and team make great use of local ingredients and deliver a meal of special moments.
We had the élégance dinner menu, which was fresh, light and balanced. I replaced the meat dish by a vegetarian option, which was very tasty.
While the flavours could have been a bit bolder at times and the explanations a bit more complete (i.e.: not only what the dish is, but also why the ingredients were selected, describing « the perfect bite », etc.), everything was perfectly cooked, well thought out and beautifully presented. The « dishes » starring Granny Smith apple, peppers and cucumber were particularly stimulating, as they are rarely put at the « centre ». The sommelier was incredibly knowledgeable, patient and serviceable. The gin & tonic was one of the best we’ve ever had and the wines selected for the fish and meat dishes were a great discovery. Finally, the desserts were a wonderful surprise. I am usually not a big fan of desserts, but the apricot raviole might have converted me. It was bold, exciting and not too sweet - for me, the star of the show 🌟
