John explained the history, usages, properties, and processes of cacao-we learned so much more than we ever expected and he showed us every aspect of the cacao and let us try it at every stage-as a fresh fruit, as a liquor, as a roasted bean (we roasted and peeled the cacao beans, were given the roasted skins to make cacao tea), as a nib (we used a traditional Mayan mortar and pestle to grind our cacao), and as a chocolate caliente and a cacao paste. The quality of the demonstration, energy and ambience, along with a personal experience made this tour one of the best experiences we had in Antigua.
