I did hotel management and worked as chef for 3 years in The Park chennai before I switched to IT
Location is paramount. A small place near main bus stop or famous shopping plaza is far better than some where inside the street. Never go for lease go for rent with option of turning lease if things work out.
1 ) It looks like you don't have hands on experience in running a kitchen or restaurant. So first I would encourage you to work some where for free or salary. Atleast try part time it helps a lot.
Nothing beats experience. First hand you will experience the pro's and con's with out spending a penny.
Contacts : yes reach out to people in ur locality from best chef to best meat supplier. Talk to them and ask lot of questions understand ur locality well and competitors.
Cook : Learn cooking can't stress enough. Trust me finding a skilled cook is far tougher now because of low pay and long hours. Almost everyone is switching to different industry. So before you have a good cook never start and also always have a back up.
Important point : Always do background check about the cook. Professional skill as well as character is very important.
Tip : we had a restaurant in our locality who served excellent chicken gravy kurma (lot of coconut paste did the trick) … We personally met that chef after hours paid him and learnt the recepie and had him try in our kitchen also we tried it out in front of him. We were talking to him for six months before he agreed.
Never comprise on quality. Today Saravanabhavan is what it is because of food taste and quality.
Cash flow: please remember it takes anywhere between 2 to 6 months to set in so you need to have enough cash to run business and pay salary.
Restaurant is a good business but I hope you realise it's really tough, medium profit and high risk. But if it works ! Bingo !
Please take time and do not do things in a hurry. Be open minded and look at every option available before you start.

First of all the food quality was just average and staff was also very lazy and inattentive and it's not the food quality that made me rate it one star it's staff and their behavior towards us. Second, the ambience. The reason we wanted to go the restaurant is to have a chill experience in this scorching heat and guess what they had the worst AC. Even the air coming out of the ac was hot af. We told them to look into the AC and they didn't even care. When we entered it was already hot in there. It should already have been chilled there.
