Chef Asim, your biryani is absolutely incredible!
The presentation and smell: As soon as you will see steam eminate through your ordered plate of biryani, you will smell that alluring and gentle sort of aroma.
The taste of the rice: The rice of Swaad biryani is a textbook description of how the rice in a biryani should be really cooked. Each grain of the rice is fluffy, separate and not clumped together! It feels warm and comforting to the touch. The rice itself feels complete in all aspects and one will not really miss the meat by tasting the rice itself, because all the flavours of the meat are trapped inside the rice. I think as the meat cooks, it has given up all its flavours in the form of the steam that rises from that meat marinated in all the masalas, and that steam - that very steam - as it rises finds its way and impregnates the rice with all that flavour and this is what the biryani at Swaad is all about.
The taste of the meat: The meat has the gentlest of bites! Its hot to the touch, but one is so greedy that one cant wait more. There is a light smokiness to the meat. The meat has allowed all the flavours in it. It has drawn all the flavours in it which has made it juicy and tender. With the least amount of bite it gives up, it releases all those delicious flavours into your mouth.
The masala: The masala is uniformly spread and has really gone into every grain of the rice and the meat. You can taste the masala, but the masala makes its presence felt in a very gentle sort of a fashion. Its not the sort of masala that will jolt your senses. Its the sort of masala that will lull your senses, that will comfort your senses!
Conclusion: Beyond all the adjectives that I can use to describe the taste of Swaad biryani - this biryani makes me feel happy inside! The biryani at Swaad is so delicious that it does not even get an opportunity to get cold, because its over even before that! It will make you want to go back to it bite-after-bite!
It is a happy coming together of the rice, the spices and the flavours from the meat making for one supremely delicious mouthful!
With all due apology to the chicken lovers out there, my favourite biryani - any day - is a mutton biryani!
